The inability of most animals to digest cellulose, the main component of plant cell walls, stems from the lack of necessary enzymes. Specifically, animals lack the enzyme cellulase that breaks down cellulose into glucose molecules. Unlike some bacteria and protozoans that produce cellulase, enabling them to digest cellulose (as seen in the gut flora of ruminants like cows), most animals don't harbor these cellulose-degrading microbes in a way or amount that would allow for significant digestion of cellulose. Therefore, while cellulose passes through the digestive systems of animals like humans, it remains largely undigested, acting instead as dietary fiber that aids in the digestive process rather than serving as a significant source of nutrients. Some animals have evolved symbiotic relationships with microorganisms that can break down cellulose, allowing them to gain energy from cellulose indirectly.
