Humans and many animals cannot break down cellulose due to the absence of the necessary enzyme called cellulase, which is required to break the beta-1,4 glycosidic bonds present in cellulose. Unlike other carbohydrates that we can digest, such as starch, which has alpha-1,4 glycosidic bonds, the beta configuration of cellulose makes it resistant to the digestive enzymes produced by the human body. Ruminants like cows, and some insects and microorganisms, however, possess this enzyme in their digestive systems, allowing them to digest cellulose and convert it into nutrients. For humans, while cellulose remains indigestible, it plays an important role in our diet as dietary fiber, aiding in digestion and helping to maintain a healthy gut.
