Humans are unable to digest cellulose due to the absence of the necessary enzyme called cellulase in their digestive system. Cellulose, a complex carbohydrate found in the cell wall of plants, remains undigested as it passes through the human digestive tract. Unlike some herbivores and microorganisms that possess cellulase to break down cellulose into glucose units, humans can only partly break down some polysaccharides like starch.
