An extract typically involves extracting flavors, scents, or active ingredients from a source material using a solvent like water or alcohol. Extracts can be highly concentrated, ensuring potent flavor or medicinal properties. On the other hand, an emulsion is a mixture of two or more immiscible liquids that are blended together with the help of an emulsifier. Common examples include vinaigrettes and mayonnaise. Emulsions are characterized by their smooth texture and stability. While extracts focus on concentration and preservation of active components, emulsions aim to combine substances that wouldn't naturally mix.
