The pH level affects amino acids significantly because they contain both acidic (carboxyl -COOH) and basic (amine -NH_2) functional groups, which can gain or lose protons (H^+) depending on the pH of their environment. At a low pH (acidic conditions), the amino group tends to accept a proton, becoming positively charged (-NH_3^+), whereas the carboxyl group remains mostly uncharged (COOH). At a high pH (basic conditions), the carboxyl group tends to lose a proton, becoming negatively charged (COO^-), while the amino group is less likely to gain a proton, remaining mostly uncharged (NH_2). The specific pH at which the amino acid doesn't carry any net electric charge is known as its isoelectric point (pI). Alterations in pH can influence the solubility, structure, and functionality of amino acids and their polymers (proteins), affecting biological processes and protein interactions.
