Surfactants reduce surface tension by inserting themselves between water molecules, thereby disrupting the cohesive forces that pull the water molecules together. The surface tension of water is a result of the strong cohesive forces among water molecules, which are due to hydrogen bonding. Surfactants have a molecular structure with a hydrophilic (water-attracting) head and a hydrophobic (water-repellent) tail. When added to water, the hydrophobic tails are repelled by water molecules and aim to escape the aqueous environment, positioning themselves away from water. This arrangement leads to a decrease in the cohesive forces among the water molecules at the surface, effectively lowering the surface tension. The presence of surfactants thus makes it easier for water to spread over surfaces or for objects to penetrate through the water surface, which is key in applications ranging from cleaning products to medical therapies involving lung surfactants.
