Purpose:

1. Citric acid is a weak organic acid. As a commercial chemical, it is produced in large quantities every year through microbial fermentation, using crude sugar solutions (such as molasses) and Aspergillus niger strains to produce more than one million tons on an industrial scale. Citric acid is widely distributed in plant and animal tissues and body fluids, and is present in large quantities in various fruits and vegetables, especially citrus fruits such as lemons and lime. Citric acid is mainly used as an acidulant, flavoring and chelating agent.
2. Chelating agent for trace metals; determination of phosphorus pentoxide soluble in citric acid.
